    The farm Casteldoglio srl is based on the same place where you will find the farmhouse. On an area of about 20 hectares at an altitude of between 330 and 450 meters above sea level, in addition to a traditional olive grove, the company achieved a modern system of intensive olive grove, for a total of 5500 plants grown in monocone. The chosen cultivars respect those traditionally employed in the Umbria region: frantoio, leccino, moraiolo, along with other variety like the pendolino and kalamata. The olives are harvested by mechanical means at the beginning of November, they are milled in the mill Pian delle Vigne, in Collelungo, with a continuous cycle system.

In it appears the "green" hints of fresh grass, accompanied by notes and artichoke leaf, green apple and pine nuts; tasting in the beautiful fluidity and good structure, you can appreciate the pleasant bitterness, balanced by spicy notes and in particular by an aftertaste of tomato leaves. Ideal with red meat which is white, vegetables, eggs or dairy products, but mainly fish dishes which enhances aroma and flavor.
